Chris Johnston is the owner and founder of Cheesie’s, a Chicago staple known for serving some of the most indulgent and creative grilled cheese sandwiches in the city. With a passion for comfort food and a vision to make gourmet grilled cheese more accessible, he launched Cheesie’s Pub & Grub in 2011, quickly turning it into a go-to spot for cheese lovers. Seeing the overwhelming love for his sandwiches, Chris expanded the brand by introducing Cheesie’s Truck, bringing his signature melts to festivals, private events, and street corners across Chicago.
