Like any great story, this one started with food. Spanning a decade from its start, owner and operator Elias Leija worked odd jobs, being an artist at heart and struggling to find meaning within this world to leave his mark, as many others strive to do. One thing he knew he loved was food, so in 2010, he started working for Bernie’s Burger Bus and then The Waffle Bus. Taking what he learned from them and using his Hispanic background that he learned from his mother, he created Blk Mkt Burritos in 2016. Business was good, but during the pandemic, he struggled to find an audience with bars closed. He needed something better to go viral and noticed how popular birria was in California, so he decided to put his spin on it. With the help from his mother, they created Blk Mkt Birria, and the rest is history.
