Our food truck was opened to make my parents’ wish come true and to share our family’s authentic birria recipe with our community. Every dish is made with the flavors and traditions that have been passed down through our family.

I kept their scribbled recipes, the notes about when a spice was right, and I learned to read a pot the way other people read faces. I opened Birrieria el Zacatecano to keep that kind of daily ritual alive, to make a place where people who grew up with the same smells could find them again. I get up before sunrise, sharpen knives, shave onions thin, and stand over the pot until it tells me it's ready. My name is Maria Reyes, and what keeps me going is the way customers tell me which memory a bite unlocked, watching neighbors reconnect, and knowing my work keeps my family fed and a little more rested.
