About Nool

Our story began four years ago when we moved to the DFW area, always searching for Mexican food that felt like home — the warmth of family meals, nostalgic flavors, and the comfort only homemade recipes can bring. After a long search, we realized how few places truly captured that feeling. That’s when the idea for Nool was born. Nool means grand parents in Mayan, and this is a tribute to them. We wanted to share that sense of warmth through dishes that were both familiar and different — not the usual options, but recipes that represent Mexican cuisine while staying true to our family traditions. In October 2025, we began building this dream. After months of hard work — permits, design, construction, menu testing, and sourcing ingredients — we finally opened our food truck on March 28, 2026. Since then, thanks to God, our journey has been filled with gratitude. Every day, through our food, we share a little piece of the home we were searching for.

Passion for food has always run deep in my family. While none of us formally studied gastronomy, everyone was an exceptional cook, driven simply by a shared love for the craft.​My real culinary journey began after college during a gap year abroad. Faced with the daily necessity of preparing my own meals and exposed to diverse cultures, my appreciation for cooking evolved into a true passion. Upon returning to Mexico, I began gathering time-honored family recipes from my parents and grandparents, constantly cooking for friends and loved ones.​In 2016, my cousin and I launched a food truck in Mexico, which quickly became a resounding success. However, life eventually led me back to a corporate office, placing my culinary dreams on hold.​That dream was reignited after moving to the United States.
