The moment I first tried to explain Lebanese shawarma to my new neighbors, I realized the city needed something real, so I taught myself how to do it on the road. I arrived from Lebanon in 2001 and spent time cooking with a renowned chef back home, learning recipes and techniques I kept thinking about. Those recipes came with me to Ypsilanti, I adapted them to a truck because people here deserved the same flavors I grew up with. Running a mobile kitchen means long days and quick decisions, I handle the orders, the spit, and the mornings. Serving my neighbors and seeing familiar faces return is what keeps me going. My truck operates halal and I take pride in keeping those standards every day.
