I started by cooking for family gatherings and neighborhood block parties, then folks kept asking if I’d cater their events, so I turned that into Cajun Delights & More. I’m Vanessa G. Pierson and I run the truck out of Missouri City, TX, handling the day-to-day, the orders, and the late-night cleanups. Most days I’m juggling catering requests, checking supplies, and making sure the crew shows up with the same grit I do. I like being where people are, at local events and private gigs, seeing customers come back and tell me what they liked. Food is how I connect with my neighborhood, and running this business keeps me busy, honest, and involved in the community I call home.
