Brisket plates and smoked ribs bring people back. I run a small pit on wheels in Terrell serving classic barbecue and drinks. You’ll find sliced brisket, ribs, sausage, plates and fresh lemonade along with other beverages. I keep service real and straightforward, on site for festivals, block parties and private events. We’re woman owned and minority owned, and we do catering when you need the smoke at your gathering. Lines form for a reason, I’ll get you fed and out the door.

My first smoked meat started with chicken wings for my co-workers. I’m Phyllis Williams and I started Miss Phyllis Pit BBQ here in Terrell, parking the truck on County Road 371 and figuring things out one order at a time. I handle the day-to-day, the smokers, the orders, the little fixes when something breaks, and the regulars who stop by every Friday. Running a one-woman show with 1 experienced pit master. Most days means being practical and patient, and I like that work, it keeps me honest and keeps people fed. I show up for my community, for steady hours and familiar faces, and I’m proud to be part of Terrell’s growing food scene.
