I walked out of chemo in 2018 and knew I had to do something different, I started teaching myself to smoke meat while I healed and it stuck. I opened the truck in 2021 and spent a lot of the early days running to hospitals and office parks, trying to figure out how to feed a crowd and still sleep a little. These days I run out of a commissary in Jurupa Valley and you’ll often find me parked at Riverside Community Hospital on the late shift, feeding staff after long days. I handle the cooking and the bookings myself, I like showing up to events and seeing folks relax when the smoke hits the air. This business saved me more ways than one, and I keep going because that work matters to me and to the people I get to feed.
