About Caribbean Soul Fusion
We do on-site service for events and I’m proud we’re minority owned. Expect straightforward plates, stacked and served fast. I’ll bring the mains people want, like jerk chicken and a Latin-style side, and I’ll keep the lines moving so guests don’t decamp to the chips table. The truck isn’t glossy, the grill has seen better days, and that’s part of the plan. I cook what folks ask for and fix mistakes when I make them. I show up for block parties, neighborhood events, and catered lunches, and I take the logistics seriously even if I joke about the weather. If you want simple, honest service with a Caribbean-Latin bend, I’m the truck that will turn up, feed your people, and clean up afterward.

Meet the owner

Bret Paul
Owner, Caribbean Soul Fusion
I remember the first time I sold something and felt that rush, it was an Amway catalog when I was 19 and I thought, this is me. I was born in Haiti and moved to Skokie in early 90's, I studied business marketing marketing at Northern Illinois University and spent some years at AT&T before the 2008 crash pushed me toward running my own things. I ran a cellphone shop, a senior-care business and later bought a small breakfast diner in Round Lake where I learned what customers actually want. I opened a version of Caribana in Lindenhusrt, IL in 2019 and after the pandemic closure, I focused on bringing island-soul flavor back home to Skokie with Caribana Island Grill in 2026. I like talking to people, figuring out how to make their night better, and building something that feels like our neighborhood.
