Types of Pizza Trucks
The oven type determines the style, speed, and price.
Wood-Fired Neapolitan
$12–16/personA brick or stone oven running at 800–900°F, producing blistered, charred-crust pies in 60–90 seconds. The premium option — the oven itself is the centerpiece. Best for weddings, client events, and any gathering where the food is part of the experience.
Gas Oven / New York Style
$10–13/personLarger pies sliced and served by the slice or as whole pies for tables. Faster throughput than wood-fired since pies are bigger. Better for high-volume events where speed matters more than artisan presentation.
Specialty & Flatbread
$11–15/personGourmet flatbreads, Detroit-style deep dish, or build-your-own options with creative toppings. A niche choice for events that want something beyond standard pizza without leaving the format entirely.
What a Pizza Truck Catering Menu Includes
Pizza catering menus are simpler than you’d expect — the oven does the heavy lifting.
Most trucks offer 4–6 pie options for catering: margherita, pepperoni, a meat combo (sausage, pepperoni, bacon), a veggie option, and 1–2 specialty pies (white pizza, prosciutto and arugula, BBQ chicken). Guests typically choose when ordering or pies rotate through a buffet setup.
Wood-fired Neapolitan pies are personal size (10–12 inches, 1 per guest). New York-style pies are larger (16–18 inches, 2–3 slices per guest). For a 100-person event, a wood-fired truck produces 100–110 pies; a New York-style truck produces 30–40 pies with 3 slices each.
Salads (Caesar, mixed green) are the most common side at $2–3 per person. Some trucks offer garlic knots, breadsticks, or antipasto platters. Pizza is one of the few cuisines where sides aren’t expected — the pies are the whole meal.
Two formats: window service (guests order individually) or buffet style (pies placed on tables as they come out of the oven). Buffet style is faster for large events since there’s no per-person ordering bottleneck. The truck just produces pies continuously.
What Makes Pizza Trucks Different From Other Cuisines
Pizza trucks are the only food truck cuisine where the cooking process itself is entertainment. A wood-fired oven with visible flames, a cook stretching dough, and a finished pie emerging 90 seconds later — it’s a show that guests watch and photograph. This makes pizza trucks disproportionately popular for events where social media moments matter: company events with branded hashtags, weddings, and milestone celebrations.
The practical advantage is portion flexibility. Unlike tacos or burgers where each guest gets an individual order, pizza naturally shares. A table of six splits two pies and everyone’s fed. This changes the service dynamic — the truck doesn’t need to serve 100 individual orders; it needs to produce 30–40 pies. For buffet-style events where food is set out on tables, pizza is one of the easiest formats to execute.
The constraint to plan for: pizza trucks need slightly more clearance than standard trucks because of the oven chimney. Wood-fired trucks produce some smoke (less than a BBQ smoker but noticeable). Confirm with your venue that an open flame/chimney setup is permitted, especially at covered or indoor-adjacent locations.
Best Events for Pizza Truck Catering
Weddings are the fastest-growing category for pizza truck catering. A wood-fired pizza truck at a casual outdoor reception or as a late-night snack option creates the kind of moment guests photograph and post about. The oven itself is the focal point — couples use it as a backdrop, and the dough-stretching becomes entertainment between courses.
Corporate events work well when the format is right. Pizza in a buffet-style layout (pies placed on tables as they emerge from the oven) works for team lunches, all-hands meetings, and client receptions. Individual-order window service works for smaller groups but creates longer waits for large corporate crowds.
Family events and school functions benefit from pizza’s universal appeal. Kids eat pizza without negotiation, and the format works for mixed-age groups where pleasing everyone with a single cuisine is the goal. At $10–13 for a gas-oven truck, it’s affordable for budget-conscious events.
Where pizza is a tougher fit: events where guests are standing with no tables (pizza requires two hands and a surface), events with strict dietary requirements (gluten-free and vegan options are limited), and events where the food needs to be grab-and-go portable (tacos and sandwiches win there).
Pizza Truck Oven Types: Wood-Fired, Brick, and Gas
The oven inside the truck determines the pizza style, speed, and what your event looks like.
Wood-Fired Brick Oven Truck
$12–16/personA food truck or trailer with a brick or stone oven reaching 800–900°F. Produces wood-fired pizza with the characteristic charred, blistered crust in 60–90 seconds. The oven itself becomes the visual centerpiece of the event. Most popular for weddings and premium corporate events.
Mobile Wood-Fired Trailer
$11–14/personA towable trailer with a portable wood-fired oven, smaller than a full truck but producing the same wood-smoked flavor. Easier to position in tight venues and produces less smoke. Best for intimate events of 30–75 guests where a full pizza truck would feel oversized.
Gas Oven Pizza Truck
$10–13/personA standard food truck with a gas-powered deck oven. Consistent heat, no smoke, faster throughput. Produces New York–style and Sicilian pies that serve more slices per bake. The workhorse option for high-volume corporate lunches and large events over 150 guests.
